  6. Prepare 2 of shallots, sliced thin.

  8. You need 1 tbsp of chili-garlic sauce.
  9. You need 1/4 tsp of chinese five spice.
  10. You need 1/4 tsp of fish sauce.
  11. It's 1 tsp of fresh ground pepper.
  12. Prepare 1 tbsp of ginger paste or minced ginger.
  13. You need 1 tsp of onion powder.
  14. Prepare 2 tsp of corn starch.
  15. It's 2 cups of thai sticky rice (see description for notes).
  16. Prepare 200 g of shiitake mushrooms, destemmed and sliced thin.
  17. It's 3 tbsp of sesame oil.
  18. You need 3 tbsp of peanut oil (or other frying oil).
  19. Prepare 3 of large banana leaves.

  1. Combine chicken, shallots and marinade ingredients in a bowl. Cover and refrigerate for one hour up to 4 hours..

  8. While you're waiting for the rice to finish prepare your banana leaves. Cut 4 sheets about 18 inches long and another four sheets about 10 inches long..
  9. After 20 minutes test the rice for doneness by scooping out a small hole in the middle. If all the water is done you're good to go. Set aside and allow to cool to room temperature..
  10. Place one long sheet and one short sheet of leaf down on a flat surafce perpendicular to each other..
  11. Take a handful of rice and pat it down into a circular base. You're looking for about 1/4 inch thick and 8 inches in diameter..
  12. Spoon the chicken mix onto the rice. Leave about 1/4 inch around the perimeter of the rice uncovered..
  13. Take another handful and cover the chicken, making a dome..
  14. Fold the sides of the banana leaves in lengrhwise..
  15. Bring in the top of the leaf as of you were folding a present. Secure by weaving the skewere through the layers of leaves. Break off the excess..

Grilled Whole Fish with Tamarind, Sweet Soy Sauce and Bento Rice instructions

  1. Wash fish then slice its part then out all the fillings (organs). Make sure the inner part is clean. Then wash it again.
  2. Slice its body into 3 small slice.
  3. Put fish into mixed water, Black pepper, lime and salt.
  4. Crush coriender until fine crush (you can use blender) then set aside..
  5. Crush ginger then set aside.
  6. Blend onion and garlic with blender or you can use food processor or stone.
  7. Mix step 4,5,6 then fry (without oil) until light brown or until its mixture little bit dry..
  8. Pour then mix step 7 with soy sauce.
  9. Put tamarin in a glass of water then mix 1 tsp tamarind in a sauce (step 8) then stir..
  10. Fry your fishes in deep friyj.
  11. Brush your fried fishes with sauce.
  12. Grill it in a pan.
  13. Chop-chop red chili, green chili and tomatoes.
  14. Add sliced red chili, green chili and tomatoes in sauce.
  15. Then put olive oil or vegetable oil inside. Fry it for about 5 minutes.
  16. Place your fish on a sliced banana leaf.
  17. Apply sauce (step 14) all over fish.
  18. Put garnish (sliced fresh tomato and cucumbar). Then Grilled whole fish is readyy...
